Baby Finger Food!

Oh, hi there, blog world. I didn't forget about you... well maybe a little. But I'm back now and excited to tell you that Cadence has turned into a finger food maniac! Now that she's had her little paws on a few tastes of food that she could feed herself, she has officially declared independence from mommy and that airplane-sound-making-spoon-'o-pureed-foods! So this of course created a whole new parenting challenge: How is this self appointed Mommy of the Year supposed to fill my Munchkin up with enough calories (BIG issue for my teeny tiny 3rd percentile Mini-Me), as well as the right nutrients, while allowing her to feed herself (which, by the way, takes FOREVER. We pretty much just eat all day around here...)??????? The answer? I have no effing clue. But here are a few ideas that have gone over really well with Cadence. Enjoy!

Yummy Baby Pasta
1/2 cup orzo pasta (or another small pasta)
1/2 of a small zucchini, diced really itsy bitsy small
1/2 cup ish of peas
1 tablespoon unsalted butter
1/4 cup grated cheddar cheese

Cook the pasta in boiling water, more water than you typically would use for pasta, for 5 minutes. Add the zucchini and peas and continue to cook for about 7 minutes. Melt the butter in a saucepan, stir in the drained pasta and vegetables, add the cheese and stir it all up till the cheese has melted.

Baby Mexican Food

1 tortilla- pinch off teeny tiny bits until it's all torn up
3-4 spoonfulls of refried beans
handfull of mozzarella cheese

mix the tortilla bits and the refried beans together. Put in a bowl and cover with the cheese. Microwave for 2 minutes or until the cheese melts, then let it cool before spooning it up for baby.

Veggies in Cheese Sauce

1 tablespoon unsalted butter
1 tablespoon all purpose flour
1 cup milk
1/3 cup shredded cheddar cheese
2-3 shakes of garlic powder (NOT garlic salt)
Steamed veggies of your choice (peas, broccoli, green beans, corn, etc)

Melt the butter in a sauce pan. Add the flour and stir until it's creamy. Add the milk and heat till it boils. Add the cheese and garlic powder. Stir until the cheese melts. Pour over the veggies.

So the sauce isn't really that thick when it's fresh... I took this pic after refrigerating it so it's thickened. Also, be ye warned... this one's extra messy.
